From seed to bar, on the Big Island of Hawaiʻi.

PAʻAUILO CHOCOLATE is a small-batch, farm-to-bar chocolate maker based on the Big Island of Hawaiʻi. Founded by Joshua Yang, we source locally grown cacao seed from farming communities across the island — the Hāmākua Coast, Waipiʻo Valley, and Kohala — and blend them together intentionally.

For over ten years, Joshua has been consolidating cacao from different regions of the Big Island, fermenting it by hand, and crafting it into chocolate and chocolate treats. Rather than promoting a single origin, we mix seed from across the island to develop a flavor that is distinctly and wholly Big Island — consistent, considered, and ours.

PAʻAUILO CHOCOLATE processes this locally grown cacao into chocolate bars, macadamia nut chocolates, and confections made entirely on the Big Island. Not imported. Not mass-produced. Made here, from what grows here.
